In today's video I'm sharing three make-ahead breakfast ideas for Christmas morning. Many times we meticulously plan the Christmas dinner, but rarely think about the breakfast. If you feed your family a good breakfast, they are less likely to snack and ruin their appetites for the delicious Christmas dinner.

I'm sharing a hash brown casserole that can be made the night before, a slow cooker oatmeal recipe that can be made festive with select toppings, and a delicious and easy cream cheese breakfast pastry. Let's look at the recipes now.

The holiday plates are Spode Christmas Tree, found at Riverbend Home. DCHOL10 for 10% off

Hash Brown Breakfast Casserole

Author: Jennifer L. Scott
Prep time: 20 MinCook time: 50 MinTotal time: 1 H & 10 M

Ingredients

  • 1 bag shredded hash browns (20oz)
  • 1 lb breakfast sausage
  • 1 bell pepper, chopped (green, red or combo)
  • 2 cups shredded cheddar cheese (divided)
  • 8 eggs
  • 1 cup of milk (add more as needed)
  • salt and pepper
  • 1/2 tsp season all (or favorite seasoning)
  • Chopped scallions

Instructions

  1. Grease a casserole dish and set aside. Brown the breakfast sausage in a skillet and drain the fat. Add the hash browns to the casserole dish. Add the cooked sausage, chopped peppers, and  1 1/2 cups of shredded cheese. Stir to combine. In a separate bowl, whisk together the eggs, milk, and seasonings. Pour the egg mixture over the hash brown/ meat mixture. Add milk if it seems dry, up to 1/4 cup. Cover and refrigerate overnight. In the morning, preheat the oven to 350 degrees F. Uncover the casserole and bake in the oven for 50 minutes, or until done. Serve with the remainder of shredded cheese on top and top with scallions.

  1. The night before, place the oatmeal and water in the slow cooker and stir. Cook on low for 8 hours. The next morning, scrape the crust off of the oatmeal. Serve with a variety of toppings. Ideas include: chocolate chips, crushed graham cracker, shredded coconut, chopped banana, berries, and brown sugar.
  2. The ratio for old fashioned oats to water is 1:2. If you need to make more, use 4 cups of oat to 8 cups of water.

Cream Cheese and Jam Crescent Roll Pastries

Ingredients

Pastries
  • 1 package of crescent rolls
  • 1/3 cup cream cheese
  • 3 Tbs powdered sugar
  • 8 teaspoons cherry jam (or jam of your choice)
Glaze
  • 1/2 cup powdered sugar
  • 3 tsp milk

Instructions

  1. Preheat the oven to 375 degrees F. Take the crescent rolls out of the tin, but do not unroll them. Cut the rolls into 8 slices. Place them on a cookie sheet. Press each roll slightly in the middle, keeping the outside rim higher than the dipped center.
  2. Mix the cream cheese and powdered sugar thoroughly. Place a dollop in the center of each pastry round. Top with a teaspoon of your favorite jam. Bake 14 - 15 minutes.
  3. Create the glaze by mixing together the powdered sugar and milk. Drizzle the pastries with the glaze and serve. You can make these ahead of time, but they are more delicious when served warm from the oven.

Stacie writes, "I love your 10 item updates!! You look glowing in the red dress and I love to see how excited you are about your new jumpsuit!! I remember when jumpsuits were popular in the 70's and wore alot of them then....You have inspired so many of us to curate a closet of items we love!! Recently, we purchased a new home and I was giving my friends the tour...EVERYONE of them asked me, "Where are the rest of your clothes?!" I proceeded to tell them that I subscribe to your 10 item wardrobe. Hopefully that will plant the seed:) But I can tell you, even at 60 y.o., I get SOOO excited about a new dress...God Bless you and your family...Stacie"

Thank you, Stacie! I loved reading about your friends' reaction to your small wardrobe :) Keep up the great work!

Thank you for joining me for today's video. If you try out any of these recipes, please let me know how they turn out! Have a wonderful weekend and I'll see you on Monday for my final video of 2020.
